THE FEDERATION OF ITALIAN CHEFS IN THE UK
Since 1968 Federazione Italiana Cuochi (F.I.C) promotes the Italian cuisine and runs professional development activities for chef patron, restaurateurs, teachers, students and food investors.
Federazione Italiana Cuochi UK Delegation -Italian Chefs Delegation – aims to support chefs and cooking initiatives, sharing recipes and forging relationships through food events in the UK.
RECIPE & INGREDIENTS

RECIPE: GNOCCHI ALLA SORRENTINA
INGREDIENTS For 6 people:
600gr Red Skin Potato (Pre oven baked - The potato have to be warm)
Salt
Oil Extra Virgin
150gr gratin Parmesan
50gr gratin Pecorino
3 eggs yolks
150gr flower
2 litres of water (to boil the gnocchi)
Black Pepper

INGREDIENTS for the sauce SORRENTINA
1 Tin Tomato pulp
1 tsp tomato concentrate
2 cloves of garlic
1 bunch of Basil
2 Mozzarella Bufala (or norma if you don’t find)
1 Bottle of Extra virgin olive oil
200gr semolino flour
300 gr cherry tomato

TOOLS to prepare GNOCCHI and the SAUCE
1 Cocotte in Terracotta (alternative a ball glass) for 6 people.
1 pot (pirofila) oven baket pot
1 pan medium /large fry pan
1 Pan with hot water
1 Spider spoon
1 Knife
Spatula
1 Moulin (potato mashers)
1 or 2 large trays
1 Fork
