ABOUT CHEF CHEF MARICEL LUKANIT

Maricel Lukkanit is an international vegan specialised personal chef from Germany based in Thailand. She is also the founder of VEGAN CRUSH Nutrition and Food Delivery in Bangkok. Red Lentil Patty over Quinoa Salad with Granny Smith Apple

"For the salad
• 200g white quinoa (rinsed)
• 400ml water
• 1 granny smith apple (cut in cubes)
• 50g baby spinach or lettuce
• Handful parsley (chopped)
• 1 Tbsp lime juice
• 1 Tbsp olive oil
• 1 tsp sea salt

For the patty
• 100g dry red lentil (rinsed, cooked, drained)
• 100g oats (processed into flour consistency)
• 1 tomato (cut in small dice)
• 1 Tbsp cornstarch
• 1 Tbsp fresh lime juice
• 1 tsp sea salt
• Vegetable oil as needed

Ingredients
1. In a small pot add the quinoa and water. Let cook until water is almost evaporated then close with a lid and set aside.
2. In a bowl combine cooked quinoa and the rest of the salad ingredients. Toss to combine.
3. In a bowl combine all lentil patty ingredients except the oil. Using your hand shape 4 balls
and then flatten into patties.
4. In a pan heat up oil. Add the patties and let cook until golden brown on each side."
